This New Jersey bakery makes the craziest savory pastries

When we think of pastries, we usually think of puff pastries with chocolate, almonds and fruit. And while The Baker’s Grove in Shrewsbury, New Jersey, sells standard sweet pastries, but they’re also advocating for orienting pastries toward savory.

Culinary director Chris Gianfrancesco says the philosophy of their pastries is “seasonal, flavorful and decadent”. Everything they sell is homemade. The process is a labor of love that takes time.

First, they start by making the puff pastry. What sets their recipe apart from other versions is the vinegar, which adds a bit of acid to the finished dough and ensures it stays tender and flaky. Then comes the rolling, which consists of folding the dough with a large piece of cold butter. Gianfrancesco points out that the butter must remain very cold until it is cooked. When the layers of butter reach the hot oven, they create steam and puff up the dough.

Once the rolled out dough is super cooled, they place serving size squares in a muffin tin and prick the bottom with a fork. Next comes the filling. For their Tikka Masala pastry filling, they roast the chicken with curry spices before tossing it in a tomato and coconut sauce. The finished dough is garnished with pickled red onions and fresh chives.

Their cheeseburger pastry topping starts with a simple base of ground beef, which is tossed with bacon, cheddar cheese, and caramelized onions. Once cooked in the batter, Gianfrancesco decorates the top with his house secret sauce and a slice of pickle.
